Classic Beef Borscht Recipe
Step 1: Prepare the Beef
- Start with 1.5 pounds of beef tri-tip cubed into 1-inch chunks.
- Preheat your soup pot and add a little oil.
- Brown half of the beef in the pot, seasoning with salt and ground black pepper.
Step 2: Sauté the Vegetables
- Remove the browned beef and set aside.
- Add 1-2 tablespoons of salted butter to the pot.
- Add 2 chopped celery sticks, 3 medium diced carrots, and 1 large diced sweet onion. Sauté for 4-5 minutes until the onion is translucent and the carrots are tender.
Step 3: Add Garlic and Spices
- Stir in 2 minced garlic cloves, 1/2 teaspoon ground cumin, 1/2 teaspoon ground coriander, and 1/2 tablespoon sugar. Cook for about 30 seconds.
