Cooking steps

Step 1: Cook the Dal [01:13]

Heat 2 tbsp ghee in a pressure cooker. Add 1/2 inch of roughly chopped ginger. Once cooked, add 3 cups of soaked mixed dals. Season with salt to taste and 1/2 tsp turmeric powder. Cover with water and close the lid to pressure cook.

Step 2: First Tadka [02:08]

Heat 2 tbsp of oil in a small pan. Fry 2-3 sprigs of curry leaves until over-fried. Add this to the cooking dal in the pressure cooker and close the lid again.

Step 3: Second Tadka [02:50]

Heat 1 tbsp of ghee and 1 tbsp of oil in a pot. Add 2-3 dry Kashmiri red chillies and 2 medium, roughly sliced onions. Sauté well. Add 1 large, chopped tomato and cook. Once the dal is ready, add it to this pot. Add 1 cup of water, 1 tbsp of finely chopped tender coriander stems, and 1-2 tbsp of ghee.

Step 4: Third Tadka [05:28]

In a small pan, heat 1 tbsp of ghee and 1 tbsp of oil. Add 1 tsp of cumin seeds, a pinch of asafoetida, 2 chopped green chillies, 1/2 tsp turmeric powder, and 1/2 tsp of Degi red chilli powder. Add a little water to finish the tadka and pour it over the dal.

Step 5: Smoke the Dal [07:09]

Heat a piece of coal on the stove until it is red hot. Place it in a small metal bowl inside the pot of dal. Add 1 tsp of ghee over the coal and quickly cover the pot with a lid to trap the smoke.

Step 6: Serve [07:49]

Remove the smoke bowl. Serve the dal in a bowl, garnished with chilli oil and a coriander sprig.
