Cooking steps

Cheesy Garlic Scalloped Potatoes

Step 1: Prepare the Potatoes [00:06]

Slice the potatoes very thinly and soak them in a container of water to remove the excess starch.

Step 2: Make the Garlic Butter Base [00:12]

In a saucepan over medium heat, melt the butter. Add the finely chopped onions, a pinch of salt, and some black pepper. Cook for about 2 minutes until translucent. Add the garlic and cook for 30 seconds.

Step 3: Create the Roux and Sauce [00:28]

Add the flour to the butter mixture and cook for 1-2 minutes. Pour in the heavy cream and chicken stock while whisking to prevent the roux from breaking. Season with fresh rosemary, nutmeg, and a little cayenne pepper. Stir in the shredded cheese until melted.

Step 4: Assemble and Bake [00:52]

Drain and pat the potato slices dry. In a large bowl, toss the potatoes with half of the cheese sauce. Layer the potatoes evenly in a baking tray and pour the remaining sauce over them. Cover with foil and bake at 350°F for 45 minutes. Remove the foil and bake for another 25-35 minutes.

Step 5: Final Touch [01:10]

In the last 5 minutes, top with more shredded cheese and broil until bubbly. Garnish with fresh chives before serving.
