Fluffy Buttermilk Pancakes Instructions
Preparing the batter
- In a large bowl, mix together the flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well combined.
- In a separate bowl, lightly whisk the two eggs.
- Add the buttermilk and the vanilla extract to the eggs and whisk until combined.
- Pour the wet ingredients into the dry ingredients and gently fold together using a spatula until partially combined.
- Drizzle in the melted butter and continue folding until the batter is mixed (it is fine if the batter is a bit lumpy).
Cooking the pancakes
- Preheat a griddle or large pan over medium heat.
- Add butter to the pan to coat the surface.
- Using an ice cream scoop, add about a third of a cup of batter per pancake onto the pan.
- Cook for 3-4 minutes, or until the bottom is golden and bubbles start to appear on the top.
- Flip the pancakes and cook for another 2-3 minutes, adding more butter if necessary.
Serving instructions
- You can keep the finished pancakes warm in an oven set to 200°F (93°C) on a wire rack over a rimmed baking sheet for 15-20 minutes.
- Serve piled high with a slice of butter and maple syrup if desired.
