Dairy

1/2 cup (125 ml) Low-fat Milk
1 tbsp (14g) Unsalted Butter (for steak)

Cooking steps

Sweet Potato Mash [00:19]

  1. Peel the sweet potatoes and chop them into uniform pieces.
  2. Place in a large pot, cover with at least an inch of cold water, and bring to a boil. Cook for 15-18 minutes until tender.
  3. Drain, add butter, milk, salt, and white pepper, then mash until desired consistency.

Broccolini [01:19]

  1. Trim the broccolini, removing any woody ends, and chop into thirds (florets and stems separated).
  2. Blanch in boiling water for 2 minutes, then drain.
  3. In a pan, heat 1 tbsp olive oil with minced garlic until fragrant.
  4. Add the blanched broccolini, seasoning with salt and pepper. Cook for 2 minutes, then finish with a squeeze of fresh lemon juice.

Cajun Steak [02:10]

  1. Pat the steak dry, trim excess fat, and slice into bite-sized, even pieces.
  2. In a bowl, toss steak with smoked paprika, onion powder, garlic powder, dried oregano, chili powder, salt, and pepper until coated.
  3. Heat 1 tbsp olive oil in a pan over medium-high heat. Sear the steak in batches for 2-3 minutes until browned.
  4. Return all cooked steak to the pan, add 1 tbsp butter, and stir for 30 seconds to coat with the melting butter.

Assembly [07:50]

  1. Portion the mash, broccolini, and steak into 5 containers. Drizzle any remaining pan sauce over the steak.
