Shrimp And Pepper Stir Fry
Step 1: Prepare the vegetables
- Mince the garlic and slice the ginger.
- Cut the green onions into 2-inch pieces, keeping the stem and leafy parts separate.
- Cut the onion into large chunks and separate the layers.
- Cut the bell pepper into bite-sized pieces.
Step 2: Marinate the shrimp
- Clean and pat the shrimp dry.
- Combine the shrimp with salt, sugar, white pepper, 1 tsp cornstarch, 1 tsp water, and 1/2 tsp sesame oil. Mix thoroughly.
Step 3: Prepare the thickening sauce
- Mix 1/2 tsp cornstarch and 1/3 cup water in a small bowl until the cornstarch is completely dissolved.
Step 4: Stir fry the vegetables
- Heat oil in a pan over medium-high heat.
- Add the onion and bell pepper to the pan and stir fry for 20 seconds.
- Season with a tiny bit of sugar and a little salt, and continue stir-frying for 90 seconds. Remove from the pan and set aside.
Step 5: Cook the shrimp
- Heat a little more oil in the same pan and sauté the ginger slices briefly to release flavor.
- Add the marinated shrimp and pan-fry until the bottom side is golden brown. Turn the shrimp and pan-fry the other side until golden brown.
- Add the minced garlic and the stem parts of the green onion. Stir fry briefly.
Step 6: Season and thicken
- Add rice wine and cook for a few seconds to let the alcohol evaporate.
- Season with oyster sauce, soy sauce, and dark soy sauce. Stir fry until all shrimp have an even color.
- Add the cornstarch and water mixture (stir it before adding), and stir until the sauce thickens.
Step 7: Combine and serve
- Add the cooked vegetables, the leafy parts of the green onion, a touch of sesame oil, and black pepper.
- Give everything a final toss to coat, then serve.
