1/8 tsp baking soda
1 1/2 tsp corn starch
1 1/2 tsp rice wine

1 tsp sesame oil
2 tbsp dark soy sauce (for sauce) + 1/2 tsp dark soy sauce (for shrimp)
3/4 tsp soy sauce
1/4 tsp black pepper
6.7 oz/150 ml water

Cooking steps

Shrimp Chow Mein

1. Preparation [00:23]

  • Slice 5.3 oz of onion into large strips.
  • Finely mince 2 to 3 cloves of garlic.
  • Chop the stem part of 4 stalks of green onion and cut the leafy part into 2-inch sections.

2. Prepare the Shrimp [01:02]

  • Rinse 10 oz of peeled shrimp and pat dry.
  • Marinate with 1/10 tsp salt, 1/8 tsp sugar, 1/4 tsp white pepper, 1/8 tsp baking soda, 1 1/2 tsp corn starch, 1 1/2 tsp rice wine, 1 1/2 tsp oil, and 1 tsp sesame oil. Set aside for 10-15 minutes.

3. Prepare the Sauce [01:45]

  • Mix 2 tbsp dark soy sauce, 3/4 tsp soy sauce, and 1 1/2 tsp sugar. Stir until the sugar dissolves.

4. Prepare the Noodles [02:01]

  • Boil 16 oz of fresh chow mein noodles for 7 minutes, remove, drain, and mix with a little oil to prevent sticking.

5. Stir-Fry [02:56]

  • Sauté onions and bean sprouts with 1/8 tsp salt, 1/8 tsp sugar, and 1 tsp of the prepared sauce until lightly colored. Set aside.
  • Sauté green onion stems, add marinated shrimp, and cook until golden. Add minced garlic, 1/2 tsp dark soy sauce, stir, and remove from the pan.
  • Stir-fry the boiled noodles, adding the sauce gradually, and toss until evenly coated.
  • Add 6.7 oz of water to the noodles, cover, and cook on low heat until most of the water is absorbed.
  • Return the shrimp, onions, bean sprouts, and leafy green onions to the pan. Add 1/4 tsp black pepper, toss everything together, and serve.
