Cooking steps
Step 1: Prepare the chicken
- Poke the chicken pieces with the tip of a knife to help it absorb the marinade.
- Cut and spread out the thicker parts of the chicken to ensure even cooking.
- Lightly poke the chicken on both sides.
Step 2: Marinate
- Mix 4 tbsp mirin, 4 tbsp sake, and 4 tbsp soy sauce in a bowl.
- Add the chicken to the bowl and let it marinate for at least 20 minutes (ideally 1 hour).
Step 3: Cook the chicken
- Heat some oil in a pan over medium heat.
- Place the chicken pieces in the pan. Pan-fry until the bottom is golden brown, then flip.
- Cover the pan with a lid, turn the heat to low, and cook for 3 to 4 minutes.
- Remove the lid and turn the heat back to medium. Cook until the juices start to caramelize and the chicken develops a golden brown color on both sides.
- Remove the chicken from the pan and let it rest for 3 to 5 minutes before cutting.
Step 4: Make the sauce
- Wipe the pan clean and add the marinade used earlier.
- Bring to a boil over medium heat.
- Add 1 tsp of brown sugar to the sauce.
- Simmer, stirring occasionally, until the sauce reaches a thicker consistency.
Step 5: Serve
- Cut the cooked chicken into strips.
- Drizzle with the prepared teriyaki sauce.
