Liquid

2 1/2 cups water
5 Tbsp vegetable oil

Instructions

Bread Preparation

  1. Bring 2 cups of water to a simmer. Mix with 3 cups of flour until you have a thick paste and let it cool until barely warm.
  2. Combine the yeast with 1/2 cup of warm water and let it sit for several minutes until frothy.
  3. Add the yeast mixture to the cooled flour mixture. Incorporate the sugar, salt, and oil. Gradually add the remaining 3 cups of flour, adding one cup at a time.
  4. Using a dough hook, knead the dough for 12-15 minutes until smooth, elastic, and pulling away from the sides of the bowl.
  5. Allow the dough to rest for 10-15 minutes before dividing it into 4 equal pieces.
  6. Roll each piece into a flat rectangle, then tightly roll into a log. Pinch the seams and ends closed to shape.
  7. Place the logs seam-side down on a parchment-lined baking sheet. Brush with oil, cover loosely, and let rise until doubled in size (1 to 2 hours).

Baking

  1. Preheat the oven to 375°F. Score the tops of the loaves with a sharp knife and bake for 10 minutes.
  2. Prepare the topping by mixing the shredded cheddar, mozzarella, Parmesan, and Italian seasoning. Prepare the egg wash by beating 1 egg with a splash of water.
  3. Remove the loaves from the oven, brush with the egg wash, and sprinkle with the cheese mixture. Return to the oven and bake for another 15 minutes, until golden brown and baked through.
