Thai Poached Cod Recipe

Step 1: Sauté Aromatics

In a large pan over medium heat, heat some olive oil and sauté the julienned onion until soft and translucent.

Step 2: Add Garlic and Ginger

Add the thinly sliced garlic and julienned ginger to the pan, stirring until fragrant.

Step 3: Cook Curry Paste

Stir in 3 tablespoons of Thai red curry paste and cook for 1 minute to release its flavor.

Step 4: Add Coconut Milk

Pour in the 13.5 oz can of coconut milk and stir until the mixture is smooth and well combined.

Step 5: Season Sauce

Add the zest of 2 limes, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix thoroughly.

Step 6: Poach Cod
