Thai Poached Cod Recipe
Step 1: Sauté Aromatics
In a large pan over medium heat, heat some olive oil and sauté the julienned onion until soft and translucent.
Step 2: Add Garlic and Ginger
Add the thinly sliced garlic and julienned ginger to the pan, stirring until fragrant.
Step 3: Cook Curry Paste
Stir in 3 tablespoons of Thai red curry paste and cook for 1 minute to release its flavor.
Step 4: Add Coconut Milk
Pour in the 13.5 oz can of coconut milk and stir until the mixture is smooth and well combined.
Step 5: Season Sauce
Add the zest of 2 limes, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix thoroughly.
Step 6: Poach Cod
Gently place the 4 cod fillets into the sauce. Spoon some sauce over the top, cover the pan, reduce heat to low, and let simmer for 15 minutes or until the fish is cooked through and flakes easily.
Step 7: Serve
Spoon additional sauce over the fish before serving.
Step 8: Garnish
Garnish with fresh lime juice, a drizzle of chili oil, sliced green onions, and chopped cilantro.
