Cooking steps

Mango-shaped mousse buns

Step 1: Prep the buns [00:03]

Slice the sourdough buns and place them on a baking tray to be warmed up in the oven.

Step 2: Prepare the mousse base [00:12]

In a saucepan, heat milk with fresh vanilla bean seeds and whisk. Pour the mixture into a bowl of white chocolate chips and stir until combined. Let the mixture cool and then use a hand mixer to create a light and airy mousse.

Step 3: Prepare the mango filling [00:20]

Chop fresh mangoes and cook them in a pan with sugar and lime juice until it reaches a compote consistency.

Step 4: Assemble the mangoes [00:27]

Use a piping bag to fill the warm sourdough buns with the prepared mango compote. Next, use your hands to cover the buns with the white chocolate mousse, shaping them into a mango-like form.

Step 5: Glaze and decorate [00:31]

Dip the mousse-covered buns into a bright yellow mango-colored glaze. Use an airbrush to add reddish hues for a realistic touch. Finally, add small leaves to the top.
