Step 1: Mix Dry and Wet Ingredients
- In a stand mixer bowl, combine 500 gr flour, 12 gr fresh yeast, 25 gr sugar, and 300 ml milk.
- Mix at low speed until the dough begins to form.
Step 2: Add Eggs
- Add 1 whole egg and 1 egg yolk to the dough.
- Continue mixing.
Step 3: Switch Hook and Add Salt
- Replace the paddle attachment with the dough hook.
- Add 10 gr salt and knead.
Step 4: Incorporate Butter
- Gradually add 50 gr butter cut into pieces, one piece at a time.
- Only add the next piece after the previous one is fully incorporated.
Step 5: First Proofing
- Transfer the dough onto a work surface, fold it a few times.
- Place the dough in a container, cover with plastic wrap and a cloth.
- Let it rise until doubled in size, about 2 hours.
Step 6: Shape Rolls
- Divide the dough into pieces of about 150 gr each.
- Fold and shape each piece into a smooth ball.
- Place the balls on a baking tray and cover with a cloth.
Step 7: Second Proofing
- Let the dough balls rest for 45 minutes to 1 hour.
Step 8: Prepare for Baking
- Brush the surface of the dough balls with a mixture of egg and milk.
Step 9: Bake
- Bake in a preheated oven at 190°C (374°F) for 15 minutes.
- If the surface browns too quickly, cover with aluminum foil for the last minutes.
