Cooking steps

Breakfast 1: Bacon, Egg & Cheese Breakfast Dippers [00:27]

Step 1

Line a baking tray with aluminum foil and arrange the bacon slices. Bake in a preheated oven at 400°F for 15-17 minutes.

Step 2

In a pan over low-medium heat, cook the egg beaters while stirring in a circular motion until cooked. Season with salt and pepper to taste.

Step 3

Cook the ground chicken sausage in a pan until lightly charred and cooked through.

Step 4

Soak the rice wrappers in a small amount of egg mixture to make them pliable.

Step 5

Assemble the dippers by placing bacon, eggs, chicken sausage, and cheese in the center of the softened wrap. Roll it tightly by folding in the edges as you roll.

Step 6

Spray the bottom of the air fryer with cooking spray, add the wraps, spray the tops with avocado oil, and sprinkle with Everything Bagel Seasoning. Air fry at 400°F for 5-8 minutes until golden.

Step 7

Blend Greek yogurt, cottage cheese, chipotle peppers in adobo sauce, syrup, lime juice, water, and spices until smooth. Serve alongside the dippers.

Breakfast 2: Breakfast Quesadilla [06:15]

Step 1

Preheat the pan over low-medium heat. Whisk 200g of egg beaters with a pinch of salt and black pepper.

Step 2

Pour the egg mixture into the pan and immediately press a low-carb tortilla on top. Cover with a lid until the egg is cooked.

Step 3

Flip the tortilla and egg combination, then layer with ham slices and shredded mozzarella cheese. Fold the quesadilla in half.

Step 4

Toast until golden brown on both sides. Serve with a side of avocado-lime sauce (blended avocado, Greek yogurt, cilantro, lime juice, water, salt, and minced garlic).

Breakfast 3: Loaded Egg Bites [10:33]

Step 1

In a blender, combine 376g egg beaters, 220g cottage cheese, 12g nutritional yeast, and seasonings (salt, garlic powder, onion powder, black pepper) until smooth.

Step 2

Steam 150g of broccoli, then roughly chop.

Step 3

Dice the Canadian bacon and set aside.

Step 4

Distribute broccoli, Canadian bacon, shredded cheddar, and chopped green onions into the compartments of a muffin tin. Pour the egg mixture over the fillings, then stir gently with a spoon to combine.

Step 5

Bake in an oven at 375°F for 18-23 minutes. Let sit for 10-15 minutes before unmolding.

Breakfast 4: Cinnamon Roll Protein Pancakes [14:01]

Step 1

Whisk together pancake mix, vanilla protein powder, coconut flour, and sweetener. Stir in egg whites, syrup, and milk until just combined.

Step 2

Prepare the cinnamon swirl by mixing melted light butter, light brown sugar, cinnamon, syrup, and a pinch of salt.

Step 3

Transfer the cinnamon mixture into a small piping bag.

Step 4

Lightly grease a 6-inch pancake ring with light butter and place on a preheated pan. Add 1/4 of the batter. Pipe the cinnamon mixture in a spiral on top of the pancake batter. Add a splash of water to the pan and cover with a lid to steam cook.

Step 5

Flip the pancake and continue cooking until done. Serve warm, stacked and drizzled with more syrup or glaze.
