Cooking steps

Beef Chow Mein

1. Preparation [00:13]

  • Mince the garlic.
  • Cut half an onion into strips.
  • Cut 4 green onions in half lengthwise, then cut both the white and green parts into 2-inch sections, keeping them separate.
  • Clean the bean sprouts.
  • Cut the beef into thin slices against the grain.

2. Marinade the Beef [00:56]

  • Combine the beef with 3/4 tsp soy sauce, 1 1/2 tsp dark soy sauce, 1 1/2 tsp oyster sauce, 1 tsp sugar, 1/2 tsp baking soda, 1 tbsp corn starch, and 1 tbsp water. Mix well, then add 1 tbsp of oil and stir again.

3. Prepare the Cooking Sauce [01:21]

  • In a bowl, mix 2 tbsp dark soy sauce, 3/4 tbsp soy sauce, and 1 1/2 tsp sugar.

4. Cook the Noodles [01:33]

  • Add the chow mein noodles to boiling water. Cook according to the package instructions. Once ready, drain the noodles and toss with 1 tbsp of oil to prevent sticking.

5. Stir-fry Vegetables [01:56]

  • Heat 2 tbsp oil in a pan over medium-high heat. Add the onion, bean sprouts, and the white part of the green onions.
  • Season with 1/8 tsp sugar, 1/8 tsp salt, and 1 tsp rice wine. Add 1 tsp of the prepared sauce. Stir quickly to coat, then remove from the pan.

6. Pan-fry the Beef [02:46]

  • Add 1 1/2 tbsp oil to the pan. Sear the beef with the minced garlic. Flip after the bottom is browned, add 2 tsp rice wine, and 1 tsp dark soy sauce. Add 2 tbsp water. Once the water thickens and coats the beef, remove from the pan.

7. Stir-fry Noodles [03:28]

  • Add 1 tbsp oil to the pan and fry the noodles for about a minute. Toss and fry for another minute. Pour in the prepared sauce, adding half first, mixing well, then adding the rest.
  • Add 6.7 oz/150 ml of broth or water to braise. Cover the pan and let it cook until most of the liquid is absorbed.

8. Final Assembly [04:28]

  • Return the beef and vegetables to the pan. Toss everything together, garnish with the green parts of the green onions, and serve.
