Cooking steps

One Pan Lemon Chicken Pea Pasta

Step 1: Prep the chicken [00:15]

Cut 2 chicken breasts into bite-sized pieces and season with salt, pepper, smoked paprika, and a drizzle of sun-dried tomato oil.

Step 2: Sear the chicken [00:27]

Heat a pan, add the seasoned chicken, and sear it until it has a golden-brown color on both sides.

Step 3: Add aromatics and pasta [00:43]

Stir in more sun-dried tomato oil, some sun-dried tomatoes, and a generous scoop of garlic. Add the oricetta pasta to the pan.

Step 4: Deglaze and simmer [01:03]

Deglaze the pan with the juice of a fresh lemon. Add enough chicken stock to just cover the pasta, bring to a simmer, then cover and cook for about 10 minutes.

Step 5: Add peas and cheese [01:37]

Once the pasta is nearly cooked, add 1 cup of frozen sweet peas and a block of Boursin cheese. Cover again to allow the cheese to melt and everything to finish cooking.

Step 6: Serve [01:57]

Remove from heat, stir everything together to create a creamy sauce, and garnish with parsley.
