- In a skillet over medium-high heat, add a couple tablespoons of butter.
- Sear the seasoned roast on all sides until nicely browned.
- Transfer the seared roast into the crockpot.
Preparing the Au Jus
- In the same skillet used for the roast, add the sliced onion and sauté until translucent.
- Add the minced garlic, a splash of Worcestershire sauce, 12 oz of beer, and the Au Jus gravy packet.
- Stir and let the mixture simmer to incorporate the flavors from the bottom of the skillet.
- Pour the mixture over the roast in the crockpot and add 1.5 cups of beef broth.
Slow Cooking
- Cover the crockpot and cook on low for 6 to 8 hours.
Assembly
- Once cooked, remove the roast and shred it using two forks.
- Return the shredded beef to the crockpot to soak up the juices.
- Open the French bread rolls and place slices of provolone cheese inside.
- Pile a generous amount of shredded beef onto the rolls.
- Place the sandwiches in the oven for a few minutes to melt the cheese before serving.
