Cooking steps

Chicken Cutlet

Step 1: Prep the Chicken [00:15]

Remove the tender if present, butterfly the breasts, and use a meat mallet to pound them to about a 1/2 inch thickness.

Step 2: Marinate [01:05]

Submerge the chicken in buttermilk and refrigerate for at least 4 hours (overnight recommended). After marinating, rinse and dry the chicken thoroughly.

Step 3: Bread and Fry [05:31]

Prepare three dishes: one with flour, smoked paprika, garlic powder, onion powder, and pepper; one with eggs and a dash of soy sauce; and one with panko and fresh thyme. Coat each piece of chicken in flour, then egg, then panko. Pan-fry in avocado oil at 350°F (175°C) for 3-3.5 minutes per side. Sprinkle with flaky salt once flipped.
