Sauces and Seasonings

2 tablespoons soy sauce
2 tablespoons pepper flakes
2 tablespoons apple vinegar
1 1/2 tablespoons sugar
1 tablespoon sesame oil
1 tablespoon Sprite
1 tablespoon sesame seeds

Produce

1 large green onion
1 small yellow onion

Cooking steps

Pajeori (Korean Scallion Salad)

Preparation of the Dressing

  1. In a medium bowl, combine the soy sauce, pepper flakes, apple vinegar, sugar, sesame oil, Sprite, and sesame seeds. Mix well to create the dressing.

Preparing the Vegetables

  1. Clean and trim the green onion (scallion). Cut it into segments.
  2. For each segment, slice it lengthwise down the middle. Unfold the layers to reveal thin sheets, then fold them over again to create a tighter stack.
  3. Using a sharp knife, slice the green onion segments into very thin, long strips.
  4. Repeat the same process for the green parts of the onion.
  5. Thinly slice the yellow onion into small slivers.

Assembly

  1. Combine the sliced green onions and yellow onions in a large mixing bowl.
  2. Pour the dressing over the vegetables and toss everything together until well-coated.
  3. Serve immediately alongside your favorite Korean BBQ meat (Kogi).
